We buy at origin, in person
Once a year we sit with growers in Huila, Guji and Boquete and taste the harvest before it leaves the farm. Direct trade means a named farm and a fair price on every bag — not a marketing line.
Every lot is cupped and logged
Green coffee lands by container, gets cupped again on our own table, and rests until it is ready. Crop year, altitude, process, roast curve — nothing on the shelf is a mystery.
Roasted twice a week, in small batches
Tuesdays and Fridays the drum runs from six in the morning. No batch is bigger than twelve kilos, and nothing sits in a cup longer than ten days after roast — ask your barista for the date.
Dialed in every single morning
The first half hour of every day is spent tasting, adjusting and throwing away shots until the espresso is right. If we would not drink it, you never see it.

Floral, tea-like, apricot sweetness — the lot we fought hardest for at this year's harvest. On the pour-over bar and on the shelf all month, then it's gone until next season. When a lot sells out we would rather run empty than pad the shelf.

The Guji pour-over changed how I think about coffee — floral, almost like tea. I drive across town for it and the barista talked me through the farm it came from.
Best cortado in the district, consistent every single morning for three years. You can tell the same people have been behind the bar the whole time.
Riverside gets packed on weekends and seats go fast, but the coffee is worth standing for. Buy a bag on the way out — roast date is printed right on it.
